BAKED ZUCCHINI.mov

1 large zucchini, 1lb ground beef, 1 can diced tomatoes, 1 med diced yellow onion, 3 large minced garlic cloves, shredded mozzarella and Parmesan cheese, 2 C Italian breadcrumbs, handful of torn fresh basil, 2 eggs, salt, pepper and Italian seasoning to taste. Preheat oven at 350. Dig out zucchini from skins, chop up and add to bowl with tomatoes. Saute garlic for 2 minutes in large skillet, then add onions and cook for another 2 minutes. Brown meat in a separate skillet until there is no more pink. Add zucchini mix to the garlic and onions, and simmer on med heat for 10 min. Add eggs, meat, zucchini mix, some cheese, seasoning and bread crumbs to large bowl; mix well. Place skins on baking sheet, and scoop mixture back into skins. Bake at 350 for 40 minutes. Top with more cheese, and bake for an additional 10 minutes.
