Every time you'll see that a dish requires some red sauce...well, this is the recipe! Tips... Guess what you have to do in case you like your sauce hotter than this? How to prepare it: GETTING READY WITH THE INGREDIENTS Chop the onion medium thin. Wash the fresh basil and set aside. Process the can of pelati. COOKING YOUR DISH On a medium high flame brown the onion... When golden, pour the pelati, add salt, pepper and red pepper, and lower the flame to medium. The cooking time is about 15 minutes...this is what it takes to the sauce to get to a nice consistency. A few minutes before taking your sauce of the fire, put in the pan half of the basil... Serve your dish; sprinkle the parmesan, grate the pepper, one or two leaves of basil...the olive oil! Prosciutto rolls with Arucola: Serves: 2 Prep Time: 5 Ingredients: 6 Slices of Prosciutto 6 generous pinches of fresh Arugula How to prepare it: Cut off most of the fat from your prosciutto. Easy Party Appetizers With Chicken

Chicken is a great ingredient to use for easy party appetizers because it has a mild flavor which pairs as well with mild sauces and flavorings as with spiced ones. You can make chicken salad, chicken profiteroles or vol-au-vents, chicken canapes and lots more.

There are hot appetizers and cold appetizer recipes you can make with chicken. Cold sliced chicken is ideal for flavorful canapes. What about topping some mini toasts or crackers with cream cheese, sliced chicken and a little cranberry jelly?

You can even chop some cooked chicken breasts into cubes and thread the cubes on to toothpicks with a cube of cheddar cheese and a silverskin onion or a cube of pineapple, for cute little appetizers, if you are looking for finger food recipes.

Hot Chicken Appetizers

If you want to serve hot appetizers at your party, there are various chicken recipes you can make. You can coat chicken drummettes in a spicy mixture and cook them. Marinated chicken wings are also good. Thai style chicken kabobs are delicious and you can either serve some sauce over the chicken for a sit down dinner or serve plain grilled chicken on the skewers with a peanut dipping sauce for a cocktail party or buffet.

What about dip recipes? Combine chicken with tomatoes, melted cheese and chili peppers to make a really flavorful nacho dip. You can even make this in a crockpot and serve it in there, so it stays warm. Chicken, ranch dressing, cream cheese, hot sauce and cheddar cheese can be combined to make a really good dip, or you can get creative and add shredded chicken to any of your favorite dip recipes.

Recipe for Tarragon Chicken Puffs

These delicious hot appetizers can be made a couple of hours ahead if you like, and then reheated for ten minutes in a 325 degrees F oven or for ten seconds in the microwave. The puff pastry cases can get soggy so do not make them too far ahead of time. This recipe makes twenty four chicken puffs.

What you will need:

1/2 cup chicken broth
24 cream puffs
1 1/2 cups cooked, chopped chicken
2 teaspoons fresh tarragon
1/2 cup heavy cream
2 tablespoons flour
2 tablespoons butter
1/4 teaspoon grated nutmeg
1/8 teaspoon cayenne pepper
1/8 teaspoon salt
1/8 teaspoon black pepper

How to make it:

Melt the butter in a pan, then add the flour and whisk well. Add the broth gradually, whisking the mixture all the time. Stir in the cream. Add the tarragon, cayenne pepper, nutmeg, salt and black pepper and let the mixture simmer for a couple of minutes, stirring it all the time.

Add the chicken and bring the mixture to a boil. Take it off the heat. If it is not thick, you can stir in a little flour mixed to a paste with water and heat it more. Slice the tops off the cream puffs and spoon some chicken mixture into each one. Put the tops back on and serve hot.

How to Make Old Fashion Appetizers For Your Next Party

Take a step back in time with these old fashion appetizer recipes. Great for any party but would be especially fitting for a 50s or 50s themed party. Bring out the music from the 50s and 60s, serve Appetizer Cheesecake, Braunschweiger Ball, and/or Old Fashion Cucumber Dip and party on!

APPETIZER CHEESECAKE

This recipe is from the mother of children I went to school with in the 1950s.

2 cups sour cream
1/2 cup green pepper
1/2 cup celery
1/4 cup olives
1 tsp Worcestershire sauce
2 tsps lemon juice
5 drops hot pepper sauce
1 cup cracker crumbs

Finely chop the green pepper, celery, and olives and mix with the sour cream, Worcestershire sauce, lemon juice and hot pepper sauce. Line a 4-cup bowl with clear plastic wrap. Spread 1/2 cup of the sour cream mixture in the bottom of the bowl. Layer with half of the cracker crumbs, then 1 cup of the sour cream mixture, 1/2 cup of the crumbs, then the remaining sour cream mixture. Cover and chill for 24 hours. Unmold onto a serving platter; remove the plastic wrap. Top with the remaining cracker crumbs. Serve with fresh vegetables and assorted crackers.

BRAUNSCHWEIGER BALL

This is an old Southern Indiana recipe.

1 lb braunschweiger
1 pkg (8-oz) cream cheese
milk, as needed
1/2 tbsp chili sauce
1 onion, minced
dash of garlic salt
Chopped pecans, optional
Chopped olives, optional

Mix together the braunschweiger, chili sauce, onion, and garlic salt; being sure it is mixed well. Form mixture into a ball and chill. Add enough milk to the cream cheese to make a consistency similar to frosting. Spread the cream cheese over the braunschweiger ball. Roll the ball in crushed pecans or chopped olives.

OLD FASHION CUCUMBER DIP

This recipe is from an old country cookbook.

1/2 large cucumber, peeled
1/4 onion
8-oz pkg cream cheese
1 tbsp mayonnaise
1/2 tsp garlic powder

Blend the cucumber and onion together in an electric blender; drain well. Mix the cream cheese, mayonnaise, and garlic powder together in blender and add well drained cucumber and onion mixture. Serve with your choice of chips, crackers, or fresh veggies.
